MURABBO

Murabbo is known to all of us. Generally in India, Mango & Amla (Indian gooseberry) murabbo is famous in every home. This sweet murraba is favourite for all. Juicy & melt-in-mouth pieces of mangoes, tastes delicious. In summer, when mango season is in full swing, Aamras & ripe mango pieces are part of our meals. But once mango season ends this Murabba fulfills our sweet cravings..

Ingredients:

2 big hard raw mangoes ( preferably Rajapuri)

Sugar, quantity mentioned in procedure (point no. 5)

1 tbsp cardamom seeds

7-8 cinnamon sticks

1 tsp saffron

Method:

1. Wash mangoes properly & peel off mango till white part of mango is seen. Peel little thick.

2. Now dice the mangoes.

3. Cook mango dices in boiling water. Cook it properly till the colour turns yellowish.

4. Once it is cooked, drain out water & take it in stariner so all excess water is drained.

5. Now take the double quantity of sugar of cooked mango dices. Meaning 1:2 ratio of cooked mango dices to sugar.

6. Now in a thick bottom pan take the sugar & add water till sugar submerged.

7. Bring it to boil , stir continuously.

8. Make thick sugar syrup of two strands of consistency.

9. Now add cooked mango dices. Once you add mango dices, it becomes little thin.

10. Now cook for some more time till it becomes little thick.

11. Turn off the flame & add cardamom seeds, cloves , cinnamon & saffron.

12. Mix well & let it cool.

13. Once it is cooled, it become thick.

14. After it cools completely, store in air tight glass jar.
