MOONG DAAL SHIRA (HALWA)

Cooking is learning process, no matter how old you are, there are many things to learn. Basic cooking, traditional dishes we learn from our elders,it’s okay we make experiments & innovation in that recipes but main credit goes always to them. Today i am sharing such recipe, which credit goes to my loving sister Roshni Fofaria.

ingredients:

1 cup moong daal (split green gram)

1/2-3/4 cup ghee

3 cups milk

1 cup sugar

1 tsp cardamom powder

Few strains of saffron (soaked in little milk)

7-8 almonds finely sliced.

METHOD:

1. Soak moong daal for at least 4hours. Then drain out it and dry it off on a cloth for 30mins.
2. After it is dried, roast it in 1/2 cup ghee until it turns light pink on slow flame. This needs patience. It will take about 30-45mins.
3. After it is roasted, add milk and mix well. Then pressure cook it until 2 whistles.
4. Now take it in a non-stick pan, and cook till milk reduces. Keep stirring continuously.
5.Add sugar as soon as the milk reduced. And cook again. Cook until it becomes a lump and stops sticking to the sides of the pan. If needed, add ghee at that time.
6. Now add saffron and cardamom powder and cook again for few minutes.
7.The ghee will start separating. That means shira is cooked.
8. Garnish with almond slices and serve hot.
