CRANBERRY FUDGE (VEGAN)

Cranberry Fudge ( vegan )

In India, we get fresh cranberries very rare. But dried cranberries are available. Cranberries are often referred to as a “super food” due to their high nutrient & antioxidant. They are low in calories & high in vitamin C, A & K. We all know goodness & health benefits of almonds & cashews nuts. Combination of these three ingredients make one yummy & healthy treat.

Ingredients:
1 cup dried cranberries
1/2 cup almond powder
1/2 cup cashew nut powder
1 tsp cardamom powder
1 tbsp thin sliced almonds
1 tsp ghee.
Method:
1. Soak cranberries in warm water for few hours.
2. Then drain out water from cranberries & make fine paste of it.
3. Now heat ghee & add paste. Saute for few minutes till water evaporates.
4. Then add all three powders & mix well. Cook for few more minutes.
5. Turn off gas & once cool down keep in refrigerator & serve cold.
6. Can serve with vanilla ice cream also.
