POHA STUFFED TOMATOES

This summer special delicacy is my favourite from childhood. It is yummy , refreshing & you can have it anytime with meals as salad or without meal when your stomach demands for something cool & thirst quenching.
My native is Rajkot (Saurastra region in Gujarat). This is very famous there long back from my childhood days, at that time, in wedding & any functions, there were no large menus & so many salad variations like present. In summer, this stuffed tomatoes are present in most functions.
Now a days its almost disappeared from functions but I still love it, it’s cool, it’s crunchy, it’s filling.
Ingredients:
4 fresh & hard tomatoes
1/2 cup poha( flattened rice) soaked & drained.
1/4 cup finely chopped coriander
3 finely chopped green chillies
1 tbsp sugar
1 tbsp lemon juice.
Salt to taste.
Method:
1. Mix all ingredients in poha & mix well.
2. Cut top of tomatoes & scoop out all seeds , juice & pulp.
3. Now stuff poha mixture in it.
4. Chill it in refrigerator for at least half an hour.
5. Serve it chill.
Notes:
1. Can add other veggies like bell peppers in it.
2. Can add chat masala in poha mixture.
