SZECHWAN SAUCE ( HOME MADE )
Now a days we all are using various sauces in making different dishes. Large range of such sauces are available in market. But the joy of making it at home is always awesome for me cause of assurance of purity as well as comparatively it is cheaper than market brought.
As I got fresh red chillies, I use it instead of dry red chillies.
Ingredients:
20 dry red chillies ( I used fresh red chillies)
15 cloves garlic (minced or chopped)
1 small onion (finely chopped) (optional)
1″ ginger ( finely chopped)
2-3 tbsp water
1 tbsp vinegar
1/2 tsp soy sauce
2 tsp sugar
1/2 tsp black pepper powder
3-4 tbsp oil
Salt to taste.

Method:
1. Soak dry red chillies in hot water for 30 minutes.
2. Drain out water & make smooth paste by adding 2-3 tbsp water as needed.
3. I skipped no.1 as I used fresh chillies so no need to soak them. I removed seeds as well.4. Now heat oil, add onion & saute, after couple of seconds add garlic, mix & stir for while & add ginger also. Mix & cook for while & add chili paste.
5. Mix well & cook for 2-3 minutes & then add 1/2 cup of water, mix well, cover it & let it simmer for 10 minutes.
6. You can see that oil separates, now add black pepper powder, sugar ,soy sauce, salt, vinegar & mix well. Turn off heat after few seconds.
7. Your hot & spicy Szechuan sauce is ready.
8. Once it cools down, store in glass jar in refrigerator.
