
CAULIFLOWER PARATHA
Cauliflower is a very easily available vegetable, specially in winter. It is full of vitamin-C. It has many health benefits like it helps in digestion due to fibres in it. It boosts immune system & improves brain health, as well as effective in protecting skin from UV rays. Interesting point is it prevents cancer, cardiovascular diseases & bone loss. So we must include it in our meals. But yes excessive intake may cause gas.

Ingredients:
500gms. Cauliflower
100gms. Coriander (finely chopped)
2 medium size tomatoes finely chopped)
3 medium size onions ( finely chopped)
Salt to taste
Dry roast & grind:

30 cloves garlic
5 dry red chillies
6-8 cloves
2″ cinnamon stick
1 tbsp coriander seeds
1 tbsp cumin seeds.
For paratha:
2 cup wheat flour
4 tbsp oil
Method:
1. Knead medium hard dough.
2. Dry roast ingredients & allow it to cool & then grind it.
3. Chop cauliflower along with stalk in slices.
4. Now heat oil & saute onion till it becomes light brown.
5. Now add cauliflower & mix well. Cook it for while.
6. Once it cooks little, add tomatoes, coriander & salt too. Mix well & cook for few minutes.
7. Now add grinded masala too & mix well, cook till water evaporates totally & stuffing become dry.
8. Stuffing is ready, now make stuff paratha like aloo paratha or any other stuff parathas with ghee.
9. Serve hot with curd, green chutney, ketchup or raita.
