SAFFRONY SAMVAT KHEER

One more fasting dessert is here..
Samo/Samvat/ Moraiya/Mordhan are different names for this dessert’s key ingredient. Saffron is my favourite ingredient in dessert . It’s aroma & natural colour gives any dish a different taste & look too.. Fully loaded with almonds & pistachios this kheer is enough filling food in fasting.
Ing:
1 cup Samo
1 ltr Milk
1/2 cup sugar
1 tsp saffron ( soaked in milk)
4 tbsp almond (chopped or sliced)
3 tbsp green pistachios ( chopped or sliced)
1 tsp cardamom powder
1 tbsp ghee
Method:
1. Wash sama & soak in water for few minutes.
2. Heat ghee in a non stick pan. Saute sama for 2 minutes & then add milk.
3. Once milk starts boiling ,add sugar & slow down flame. Stir occasionally.
4. Cook till milk is reduced to half quantity & Sama is also properly cooked.
5. Now add saffron, almonds, pistachios & cardamom powder. Cook for few more minutes.
6. Serve hot or chilled as per your choice.

Notes:
1. If you wish to skip Ghee then directly boil sama & milk.
2. Can add other dry fruits of your choice.
