CABBAGE SABZI (HOME STYLE)

This home-style cabbage sabzi is a simple, comforting everyday dish made with basic pantry spices. Light, flavourful and quick to prepare, it’s perfect for daily meals and pairs wonderfully with roti, phulka or dal-rice. Cabbage, the star ingredient of this sabzi, is a highly nutritious vegetable—rich in vitamin C, fiber, antioxidants and beneficial plant compounds that support digestion, boost immunity and promote overall well-being. When cooked with a touch of potato and gentle spices, it turns into a wholesome, homely sabzi that suits both busy weekdays and traditional Indian meals.

Ingredients
3 cups cabbage, thinly grated using a slicer
1 small potato, peeled and chopped
1 tsp red chilli powder
½ tsp turmeric powder
1 tsp coriander-cumin powder
Salt to taste
2 tbsp oil
½ tsp mustard seeds
A pinch of asafoetida (hing)
Fresh coriander, chopped (for garnish)
Method:
Grate cabbage with the help of slicer, for quick , thin and uniform cabbage.
In a mixing bowl, add the grated cabbage along with red chilli powder, turmeric, coriander-cumin powder and salt. Mix well and let it rest for 5 minutes.
Heat oil in a pan. Add mustard seeds and let them crackle. Add asafoetida.
Add the spiced cabbage mixture and the chopped potato.
Mix well and cook on high flame for 2 minutes.
Reduce the flame to low, cover the pan with a lid and cook until cabbage and potato turn soft. Stir occasionally to prevent sticking.
Once cooked, garnish with fresh coriander and serve hot.
