KATHIYAWADI DHOKLI NU SHAK

Kathiyawad/Saurashtra region of Gujarat is famous for it’s delicious and spicy food. This region includes major cities like Rajkot, Jamnagar, Bhavnagar, Surendranagar and Porbandar. Food here is spicy, oily with lot’s of garlic and red chilli.
Dhokli nu shak is one of the popular Kathiyawadi dishes. This is a very flavourful and spicy curry which can be prepared with very less ingredients. In this recipe gram flour cakes (dhokli ) are cooked with spicy curd/ buttermilk gravy. This is similar to popular Rajasthani Pitod or Gatte ki sabzi. Dhokli nu shak is available in all Kathiyawadi hotels and road side ‘Dhaba’ . It tastes best with phulka roti, bhakhri, rotla or steamed rice. Key ingredients of this dish are gram flour and curd. Gramflour is gluten free and protein rich and curd has calcium and good appetite.

Serves: 4 persons
Ingredients:
For dhokli:
1 cup gram flour
1 tsp oil
1 tsp red chilli powder
1/2 tsp turmeric powder
For curry:
1 tbsp oil
1 tsp mustard seeds
1 tbsp red chilli powder
1/2 tsp turmeric powder
2 cup buttermilk (preferably sour)
Salt to taste
Method:
1. To prepare dhokli, heat oil add turmeric powder, red chilli powder and about 1.5 cup of water.
2. Once it starts boiling, turn the heat to low and slowly add gram flour.
3. After one minute of adding gram flour. Stir vigorously to mix gram flour with water properly and to keep it lumpfree. Cook it till all extra water is evaporated and the mixture becomes thick. Then turn off the heat.
4. Transfer it to a plate or thali and let it cool. Then cut it in your desired shape.
5. Add water in the pan which you prepared dhokli mixture. Scrap all batter from the sides and blend it.
6. Heat butter milk for few minutes and blend it.
7. Now prepare curry, heat oil in a pan. Add mustard seeds and let it splutter. Further add turmeric and red chilli powder.
8. Now add buttermilk, besan water, salt and one cup water.
9. Once it starts boiling,add dhoklis. After all dhoklis are added and curry starts boiling, turn the flame on low and cover it half with a lid and let it cook till dhoklis cook well and curry becomes thick.
10. Serve hot with bhakhri and condiments of your choice
