STIR-FRIED AMARANTH QUINOA BOWL

Amaranth leaves, also known as Tandljo in Gujarati and Chaurai in Hindi, are abundant in India during the winter season. This leafy green is native to America and is a rich source of protein, manganese, magnesium, iron, and phosphorus.
Quinoa, a pseudocereal grain, is considered a superfood due to its high nutritional value and health benefits. Quinoa is native to South America but is now widely available worldwide.
Here’s a healthy recipe combining amaranth leaves and quinoa:

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 2 persons
Ingredients:
- 1/4 cup quinoa
- 2 cups chopped green amaranth leaves
- 1 tablespoon chopped green garlic
- 1 teaspoon oil
- Salt to taste
Method:
- Wash and cook quinoa in sufficient water for 8-10 minutes or until cooked. Drain excess water.
- Heat oil in a pan and stir-fry the chopped amaranth leaves for 2-3 minutes.
- Add chopped green garlic and salt. Mix well and continue stir-frying for another 2-3 minutes. Finally add cooked quinoa, mix and cook for 2-3 minutes.
- Serve this healthy and wholesome Stir-fried Amaranth Quinoa bowl with curd.
Note:
1.You can add green chilies along with green garlic for extra flavor.
