YAM CURRY /SURAN SABZI

Elephant’s yam, commonly known as Suran or Jimikand in India, is a tropical tuber native to Asia. Its unique flavor profile, which is slightly sweet and nutty, pairs well with a variety of spices. Serves: 2 persons
Ingredients:
- 250 grams Suran/Yam
- 2 medium onions, finely chopped
- 6 garlic cloves, finely chopped
- 2 medium tomatoes, finely chopped/grated
- 1 teaspoon red chilli powder
- 1 teaspoon coriander cumin powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 tablespoon oil
- Salt, to taste
- Oil, for frying yam
Method:
- Peel and chop the yam into small cubes.
- Heat oil in a pan and fry the yam cubes until golden brown. Drain and set aside.
- In another pan, heat oil and add cumin seeds. Let them sizzle.
- Add chopped onions, garlic, and grated tomatoes. Sauté until the onions are translucent.
- Add red chilli powder, coriander cumin powder, and turmeric powder. Mix well.
- Add the fried yam cubes and salt to taste. Mix well.
- Serve hot and enjoy!
Note:
1.You can adjust the amount of spices according to your taste preferences.
- Grease your hand with oil before working with yam, itching may appear due to starch.
