SPICY VEGETABLE RICE BOWL

A Rice Bowl typically consists of an assortment of vegetables and proteins served over a bed of rice. Rice bowls are incredibly easy to make and offer a wholesome one-pot meal. The best part about rice bowls is that you can customize them to your liking.
In this recipe, I’ve prepared herb-infused rice with a creamy and spicy vegetable curry and grilled tofu.

Cooking time: 20 minutes
Serves: 2 persons
Ingredients:
For Herb Rice:
- 2 cups steamed rice
- 1 tsp oregano
- 1 tsp red chili flakes
- 1 tbsp oil
- 6-8 fresh basil leaves
- Salt to taste
For Vegetable Curry:
- 4 slices tofu (approximately 2″ x 1″)
- 1 cup chopped mixed vegetables (red bell pepper, yellow bell pepper, baby corn, zucchini, broccoli)
- 2 tbsp oil
- 1 tsp black pepper powder
- 1 tbsp finely chopped garlic
- 1 tsp all-purpose flour
- 1 cup milk/water
- 1 tsp Schezwan sauce
- 1 tsp oregano
- 1 tsp red chili flakes
- Salt to taste
Method:
- To prepare herb rice, heat 1 tablespoon oil in a pan. Add 1 teaspoon oregano and 1 teaspoon chili flakes. Sauté for a couple of seconds.
- Add steamed rice, salt, and mix well. Cook for 2 minutes. Tear some basil leaves and turn off the heat. Transfer rice to a bowl and set aside.
- In the same pan, heat 1 tablespoon oil. Add vegetables, salt, and black pepper powder.
- Slide vegetables to one side and place tofu slices. Sprinkle some chili flakes.
- Sauté vegetables and grill tofu from both sides. Transfer everything to a plate.
- In the same pan, add 1 tablespoon oil and sauté garlic.
- Add all-purpose flour and sauté. Then add milk, stirring continuously to avoid lumps.
- Once thickening, add Schezwan sauce, oregano, chili flakes, and salt. Mix and cook briefly.
- Add sautéed vegetables, mix, and cook for a couple of minutes. Turn off the heat.
- Assemble herb rice, vegetable curry, and grilled tofu in a bowl. Garnish with basil leaves and enjoy.
