PURPLE YAM CHIPS

Purple Yam is a root which is rich source of Vitamin C. Like other roots apart from being used in fasting dishes in India, Purple Yam is added in very famous Gujarati delicacy ‘Undhiyu.

Preparation time: 10 minutes
Frying time: 15 minutes
Serves: 2 persons

Ingredients:
1 small purple yam ( ratalu )
Salt to taste
Black pepper powder to taste
Oil for frying

Method:

  1. Wash and clean properly purple yam in water and peel off. Wash it again .
  2. Make thin slices. Be careful while slicing as it is too starchy.
  3. In a hot oil, deep fry it till it turns crispy on medium flame.
  4. Remove it and sprinkle salt and pepper and toss it well.
  5. Once they cool completely, store it in an air tight jar.
