MUSKMELON SHARBAT

Muskmelon is a juicy,orange summer fruit which is rich in Vitamin A & C along with antioxidants. It also contains minerals like copper, zinc and calcium. It has a high amount of water which gives it a low glycemic score which means your body digests it slowly and it helps diabetics. Minerals in muskmelon helps us to keep ourselves hydrated and full of energy.
Muskmelon Sharbat is a delicious dessert drink also known as Sharbat-E-Kharbuja. This versatile dessert drink can be prepared in various ways and ingredients. This refreshing drink is prepared with muskmelon, sago pearls, custard powder, basil seeds and nuts. This thirst quenching drink is perfect for summer and is often served as a Ramzan or Iftar drink. This recipe is very much inspired by popular street style Badam Shake.

Preparation time: 10minutes
Cooking time: 15 minutes
Served: 6 persons

Ingredients:
3 cups chopped musk melon
3 cups milk
2 tbsp custard powder
1 tbsp sago /tapioca pearls (soaked)
1 tbsp basil seeds (soaked)
3 tbsp sugar
1 tbsp chopped cashew nuts
1 tbsp chopped almonds
1 tbsp chopped pistachios

Method:

  1. Add milk in a thick bottom pan and turn on the heat. Blend chopped muskmelon into a fine puree.
  2. When milk starts boiling, take approximately 3 cups of water in other pan and let it boil, than add soaked sago pearls and cook them until they turn transparent. Turn off the heat and strain them and keep aside.
  3. Now dilute custard powder in little milk and add into a boiling milk and stir well and turn the flame on low , let it simmer. Add sugar also.
  4. When milk turns little thick, add muskmelon puree, mix well and cook for few more minutes, then turn off the heat. Let it cool, stir occasionally.
  5. Once it comes to room temperature, transfer it to one big mixing bowl. Add soaked basil seeds, cooked sago pearls and chopped nuts. Mix well and refrigerate till chilled.
  6. Serve chilled.
