SPINACH CORN RICE

Spinach Corn Rice is healthy and delicious Indian rice plate which is delicately spiced. This vegan and glutenfree rice is made with spinach,corn and whole spices and can be prepared quickly. Though this rice is mildly spiced, it still tastes scrumptious. This iron rich rice is a meal in itself, you wan’t need any other side dish but you can serve it with any raita, salad etc.

Cooking time: 10 minutes
Serves: 2 persons
Ingredients:
2 cup cooked rice
1/4 cup boiled corn kernels
1 cup spinach puree
1 sliced onion
1 finely chopped tomato
5 finely chopped garlic cloves
2 finely chopped green chillies
1 tbsp oil
2 cardamom
2 cloves
2 small piece cinnamon
Salt to taste
Method:
- Heat oil and add whole spices and sauté for a few seconds. Further add garlic and green chillies and sauté till rawness of garlic gone.
- Then add sliced onion and sauté for 1-2 minutes, add tomatoes and cook till tomatoes becomes mushy.
- Further ads spinach puree, boiled corn and salt. Mix well and cook for couple of minutes.
- Lastly add cooked rice and mix carefully and cook for 1-2 minutes on a low flame than turn off the heat.
- Serve hot.
