( DRUMSTICK POTATO CURRY)

This quick and simple curry recipe is common in Gujarati households. Drumsticks as we know has a lot of nutrients and health benefits. Potato is a versatile root vegetable which can be mixed with any vegetable. Adding potato in any vegetable , enhances the taste of that dish. Usually potatoes are favourite of all, so when certain veggies are not liked by family members, adding potato in that vegetable can mostly solve the problem. Even when your vegetables are not sufficient , add potato and your problem is solved in snap of fingers.
I have prepared this curry with basic spices only, as my family love it simple. But you can add garlic, onions, tomatoes if you wish.

Preparation time: 15 minutes
Cooking time: 10 minutes
Serves: 3 persons

Ingredients:
3 fresh and tender drumsticks
4 medium sized potato
2 tbsp oil
1 tsp mustard seeds
Pinch of asafoetida
1 tbsp coriander-cumin powder
1 tsp turmeric powder
1 tsp red chilli powder
Salt to taste
Pinch of cooking soda

Method:

  1. Cut drumsticks in 2″ pieces, wash it. Boil about three glasses of water by adding salt and pinch of cooking soda. Once water starts boiling add drumsticks and let it cook.
  2. Pressure cook potatoes. Peel potatoes, chop three potatoes in dices and mash one potato.
  3. Heat oil, add mustard seeds, once they splutter add asafoetida and potato.
  4. Add salt and all spices. Mix and add about two cups of water. Mix and let it boil.
  5. Once it starts boiling, add mashed potato, mix and cook for two to three minutes on medium flame.
  6. Then add cooked drumsticks, mix carefully and cook on medium flame for couple of minutes, then turn off the heat.
  7. Serve hot with meals.
