SWEET POTATO SABZI ( DRY )

Sweet potato is a root vegetable and available and cultivated across the world. Sweet potatoes are an excellent source of Vitamin-A. It also has Vitamin-C and minerals like manganese and copper in good amount. All these nutrients help in digestion and curing stomach ulcers. It maintains water balance in body and is a good immunity booster.
Prepared this dry sabzi which can be cnsumed during fasting. Which can be prepared in a jiffy

Preparation time: 10 minutes
Cooking time: 5 minutes
Serves: 2 persons

Ingredients:
4 sweet potatoes
1 tbsp ghee/groundnut oil
1 chopped green chilli
1 tsp cumin seeds
1 tbsp sesame seeds
1 tbsp peanut powder
1/2 lemon
1 tbsp finely chopped coriander
Rock salt/Sengha namak to taste

Method:

  1. Wash sweet potatoes properly. Cut them in halves and pressure cook them. Then peel and chop in dices.
  2. Heat ghee/oil and add cumin seeds and sesame seeds and let them splutter.
  3. Then add green chilli and peanut powder and saute for a while.
  4. Then add chopped sweet potatoes, salt and lemon juice. Mix and cook for a while.
  5. Then add coriander and turn off the heat.
  6. Serve hot.
