GAJAR – MATAR SABZI
(CARROT – GREEN PEAS CURRY)

Gajar matar sabzi is very popular in North Indian house holds during winters. This sabzi is prepared in ghee with very less and basic spices. Like gajar ka halwa, this sabzi is also quintessential in winters. Gajar matar ki sabzi is not only visually beautiful and colourful but winter fresh juicy carrots and tender green peas have natural sweetness and deliciousness, that make this sabzi so yummy with less spices too. This simple yet wholesome sabzi is vibrant in look, easy to cook and full.of nutrients.

Preparation time: 5 minutes
Cooking time: 20 minutes
Serves: 3 persons
Ingredients:
1 cup green peas
3 carrots
1/4 cup finely chopped coriander
3 tbsp ghee
1 tsp cumin seeds
1/4 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander cumin powder
1 tsp sugar (optional)
Salt to taste
Grind into paste:
1 tomato
1 small onion(optional)
2 green chillies
1 big piece ginger
Method:
- Peel and chop carrots in small roundels. Grind all ingredients of paste and prepare the paste.
- Heat two tbsp ghee in a pan, add cumin seeds and let them splutter. Furrher add paste and sauté properly. Lastly add salt and dry spices and sauté.
- Now add green peas and carrot. Mix well with paste and sauté for a while. Then add 1/4 cup of water, cover and cook for 5 – 7 minutes.
- When it cooks, add sugar and coriander and cook for a couple of seconds. Lastly add spared one tbsp ghee, mix and cook for a couple of seconds and turn off the heat.
- Serve hot this aromatic and delish sabzi with roti-paratha.
