RAW TURMERIC CURRY
(KACCHI HALDI KI SABZI)

Turmeric powder is one of the basic spices for cooking any cuisine. As we know, turmeric is best antiseptic and immunity booster. In Ayurveda , turmeric is being used as a medicine from centuries.
Raw turmeric roots are available in abundance in winter. We generally used it in fresh pickle, juices etc. Raw turmeric curry/sabzi id popular in Rajasthan and North Gujarat. This winter special delicacy is specially served in marraige or occasions in winter. This sabzi is always prepared in ghee.

Preparation time: 10minutes
Cooking time: 20minutes
Serves : 2 persons

Ingredients:

1/2 cup grated fresh turmeric roots
1/2 cup chopped spring onions
1/2 cup chopped green garlic
1/2 cup chopped tomatoes
1/2 cup boiled green peas
1 tbsp ginger chilli paste
1/2 cup ghee
1/2 cup curd
1 tsp red chilli powder
1 tsp cumin-coriander powder
1 tsp jaggery (optional)
Salt to taste

Method:

  1. Wash and peel turmeric roots, then grate them.

2. Heat ghee in a thick bottom pan and add grated turmeric and sauté on slow flame for 5-7 minutes.

3. Add green garlic and sauté for 1-2 minutes. Then add ginger chilli paste and sauté for couple of seconds.

4. Add spring onions and sauté for 2-3 minutes. Further add tomatoes and green peas and sauté for 2-3 minutes.

5. Now it’s time to add spices, salt and jaggery. Mix well and sautĂ© for a while.

6. Add curd, mix well and continue to cook on a slow flame till ghee comes on top. Then turn off the flame.

7. Serve hot with any Indian flat bread. Though it tastes best with Rotla (pearl millet flat bread) along with buttermilk, pickles, salad etc.
