PARMIGINIA WITH HERBED SPAGHETTI

Indian foodies are fond of foreign cuisine. One of the most popular foreign cuisine in India is Italian cuisine. Pasta is one of the main dishes in Italian cuisine. Various pasta and various dishes with pastas are therein Italian cuisine. Parmiginia /Parmigiano is popular dish from Parma – city of Italy. Key ingredients of this dish is eggplant and it is served with spaghetti and tomato cream sauce.

Preparation time: 20 minutes
Cooking time: 25 minutes
Serve : 4 persons
Ingredients:
3-4 round brinjals
4-6 cheese slices
1 cup bread crumbs
1 tsp mixed herbs
1/2 tsp salt
1/4 cup all purpose flour
2 cup tomato cream sauce
3 cup boiled spaghetti
2 tbsp olive oil
2 tbsp mixed herbs
Oil for frying
Method:
1. Heat olive oil, add mixed herbs and saute for 1 minutes on low flame. Then add boiled spaghetti, salt and mix well and turn off the heat after 1 minute.

2. Prepare slurry of all-purpose flour by adding water. Cut brinjal in slices. Add salt and mix herbs in bread crumbs and keep it aside. Cut the cheese slices according to brinjal slices.

3. Now apply tomato cream sauce on one slice of brinjal, then arrange cheese slice on it and cover it with second brinjal slice. Now dip this prepared brinjal sandwich in the slurry and roll into prepared bread crumbs and press it with hands ,so it is covered properly with breadcrumbs. Continue with the rest of brinjal slices.
4. Heat oil and deep fry prepared brinjal slices.
5. Serve hot with spaghetti and tomato cream sauce.

Note:
1. Can shallow fry brinjal slices.
