(JOWAR PARATHA )

Juar jo dodo is a rustic flat bread from Sindhi cuisine. It is prepared from gluten free jowar(sorghum) flour. This traditional and authentic gluten free flat bread of Sindhi cuisine is flavoured with onions, green chillies coriander etc.
Juar jo dodo is served as a breakfast with tridali dal, pickle, curd, buttermilk etc.

Preparation time: 10 minutes
Cooking time: 20minutes
Serves: 4 persons

Ingredients:
2 cup jowar flour
2 finely chopped spring onions a along with greens
3-4 finely chopped green garlic along with greens
3 finely chopped green chillies
2 tbsp finely chopped coriander
1 tsp cumin seeds
1 tbsp oil
Salt to taste
Ghee for cooking dodo

Method:

1. Add all the ingredients in jowar flour and mix well. Then knead medium soft dough with warm water.

2. Take some dough and make a ball and lightly flatten it.

3. Take a plastic sheet , grease it and keep a flattened dough on it and start patting with fingers and prepare dodo.

4. Now on a preheated skillet invert the plastic sheet over it and carefully place the dodo.

5. Keeping the flame slow, cook little without ghee.

6. Further add ghee and cook from both sides by lightly pressing with tavetha-roti turner.

7. Serve hot.

Note:
1.Can add fenugreek leaves too.
