MATAR PARATHA
(GREEN PEAS STUFFED PARATHA)

A paratha is a flat breadof India, Sri Lanka, Pakistan, Nepal, Myanmar, Bangladesh and Maldives where wheat is a staple. Paratha word is a combination of two words ‘parat (layers)’ and ‘atta(dough)’ which literally means layers of cooked dough.
Matar paratha is an Indian flat bread stuffed with green peas, which is popular in North India, especially in Punjab and Delhi. In winters, green peas are available in abundance and they are very tender and sweet. Matar paratha can be served as breakfast or in meals with pickle, curd etc.

Preparation time : 15 minutes
Cooking time : 20 minutes
Serves : 4 persons
Ingredients:
For dough :
2 cups of wheat flour
2 tsp oil
Salt to taste
For matar filling:
2 cup green peas
1 cup finely chopped coriander
2 tbsp gram flour
1 tbsp oil
1/4 tsp cumin seeds
1 tsp red chilli powder
1 tsp dry mango powder
1 tsp garam masala
Salt to taste
Ghee for cooking paratha
Method:
1. Knead medium soft dough and cover it. Pressure cook the peas for 3 whistles and if there is any water left, drain it. Then grind it into a semi coarse paste.




2 . Dry roast gram flour.
3.heat oil, add cumin seeds and let it splutter. Then add grinded paste and sauté for 1 minute.
4. Further add all the spices , salt and cook for 1 minute.
5. Add roasted gram flour and mix well and cook for another 1 minute.
6. Lastly add coriander, mix well and turn off the heat.
7. Knead the prepared dough again for a couple of minutes. Divide it in equal parts.
8. Take one and roll it . Spread some oil on it. Put prepared filling and cover and seal it.

9. Now roll it again.
10. In a preheated skillet , first cook without gher from both sides.


11. Then add some ghee and cook from both sides.

12 . Serve hot.
