RED VELVET SOUP

Soup, a primary liquid food is prepared in combination of vegetables, meat, noodles etc. The word “soup” comes from French word “Soupe”. Soup is said to be as old as the history of cooking. Generally soups are served warm or hot, but there are few soups which are served cold. Piping hot soups are preferable in cold winter days. They are cozy, healthy, filling and warming.
Christmas is around the corner. Let’s welcome winter and Christmas with Red velvet soup -smooth like velvet. I love this soup little thick.

Preparation time : 5 minutes
Cooking time : 20minutes
Serves : 2 persons
Ingredients:
1/2 cup beetroot dices
1/2 cup carrot dices
1/2 cup tomato dices
1/4 cup red lentils(masoor dal)(washed)
1 onion (sliced)
5 garlic cloves (sliced)
1 tsp butter/oil/ghee
1 tbsp almond silvers
1 tsp pepper powder
Salt to taste

Method:
1. Heat oil in a pressure pan and sauté onion and garlic.

2. Add all the vegetable dices and washed dal and sauté for a while.

3. Add one cup of water and pressure cook it.


4. Then grind it and pass through colander or sieve.
5. Add one more cup of water or more as per the thickness you want.
6. Add salt and black pepper and cook for 5-7 minutes on a low flame.
7. Top up with almonds and serve hot.

Note:
1. Can add your choice of seeds.
2. Can add fresh herbs of your choice.
