ZUNKA ( JHUNKA )

Zunka or Jhunka is a traditional Maharastrian dish served with Bhakar. The key ingredients of Zunka is gram flour. It is dry version of pithla – another Maharastrian dish. Combination of Zunka Bhakar is quintessential peasant fare of Maharastra accompanied by thecha.
Let’s have a look on the recipe of this spicy and delicious delicacy of Maharastra.

Preparation time : 10 minutes
Cooking time : 20 minutes
Serves : 4 persons
Ingredients:
1 cup gram flour ( besan )
4 tbsp oil
1/2 tsp cumin seeds
1/2 tsp mustard seeds
Pinch of asafoetida
7-8 curry leaves
2-4 chopped green chillies
1 finely chopped onion
2 tbsp finely chopped coriander
8-10 finely chopped garlic cloves
1/2 tsp turmeric powder
1 tsp kashmiri red chilli powder
1 tsp coriander cumin powder
Salt to taste
1 cup warm water ( approximately )
Method:
1. Heat oil in a pan, add cumin seeds and mustard seeds. Once they splutter add asafoetida, curry leaves, garlic and green chillies. Saute for a few seconds.

2. Add onions and saute it till it becomes translucent.
3. Then add dry spices and saute it for a couple of seconds.
4. Now it’s time to add gram flour, mix and saute it on a slow flame for 2-3 minutes or till it turns aromatic.


5. Further more, sprinkle warm water gradually. Do not add more otherwise it will become lumpy.

6. Cover and cook on a slow flame for 2-3 minutes. It will cook properly. Finally add coriander , mix and turn off the heat.
7. Serve immidiately with hot bhakhar.

Note:
1. Add green chillies as per the spiciness you want.
2. Can add spring onions instead of onions.
3. You can add garam masala.
