BUTTERMILK MASALA
( CHAAS MASALA )

Buttermilk is fermented milk. Traditionally , it was the liquid left behind after churning butter out of cream, so it’s called buttermilk. But now a days apart from above said, buttermilk is prepared from curd by whipping and adding water.
Buttermilk is super dairy product with many health benefits. It is very popular across India. It is consumed at daily basis with meals in Gujarati house holds. In summer, it’s consumption is increased.
Buttermilk have many health benefits like – improves digestion, helps in acidity and yes in some way it helps in cutting down fats. It helps in dehydration. It contains calcium, proteins, potassium and vitamin B.
In Gujarati – Chaas, Hindi – Chaach, Tamil – Mor, Malayalam – Mooru, Kannada – Majjijge, Marathi – Taak/Tak and Bengali – Ghol. It is also reffered as a Kutchi Beer. Though it is known by different names in different states, people love this drink at any time.
Chaas Masala not only adds taste to buttermilk but it makes buttermilk more healthy.

Cooking time: 10 minutes
Ingredients:
1/2 cup cumin seeds
1/4 cup black salt ( sanchar )
1/4 cup rock salt ( Sengha namak )
1/4 cup salt
8-10 black pepper
1 tsp dry ginger powder ( Soonth )
Method:
1. Dry roast cumin seeds on a slow flame till it becomes aromatic.
2. Add black pepper in it and roast for a few seconds.
3. Let them cool. After they cool down, grind it in a coarse grind it in a coarse powder.
4. Transfer it in a broad vessel. Add rest of the ingredients and mix well.
5. Store it in air tight glass bottle.
Note:
1. Can adjust salt quantity as per taste.
