VEG. FRIED RICE

Veg fried rice is one of the most pooular dish along with hakka noodles and manchurian in Indo Chinese food. This flavourful and aromatic rice dish is paired best with gravy Manchurian. And it turns into a satisfying mini meal.
Though there are little variations in spices and veggies which we add as per choice. Here I have made rice with mild taste and choice if veggies.

Preparation time: 40 minutes
Cooking time: 20 minutes
Serves: 4 persons
Ingredients:
1cup long grain rice
3-4 finely chopped spring onions ( whites and greens separated )
5 finely chopped garlic cloves
2 tbsp finely chopped carrots
1 tbsp finely chopped capsicum
2 tbsp shredded or grated cabbage
1 tsp finely chopped ginger ( optional )
3 tsp soy sauce
1 tsp vinegar
1 tsp black pepper powder
2 tbsp oil
Salt to taste
Method:
1. Wash and soak the rice for 20-30 minutes, then drain it. Then cook rice in boiling water by adding salt and few drops of oil. Cook the rice al dente,not more. Drain and keep aside. Rinse it through cold water to prevent over cooking and avoid sticking. Once the rice cools down completely then prepare rice.
2. Heat the oil in pan and add garlic and saute few seconds, add ginger if you wish to add.
3. Further add spring onion whites and saute for 2 minutes.
4. Then add all the veggies and stir fry it on a high flame. Keep stirring and tossing veggies for uniform cooking. This will keep the crunchiness of veggies intact and avoid burning of veggies.
5. Now add soy sauce , black pepper powder and salt and mix well.

6. Add cooked rice and mix gently with veggies. Stir fry it for a couple of minutes.
7. Lastly add vinegar, mix well and also add spring onion greens. Turn off the heat.
8. Serve hot with Manchurian or your choice of dish.
