KASHMIRI KAHWA

Known as heaven on earth , Kashmir is famous for its natural beauty and considered as a tourist’s paradise. Kashmiri cuisine is a combination of vegetarian and non vegetarian dishes. Rice is a staple food in Jammu and Kashmir.
The dishes of Dogra region are quite famous . Dogra cuisine’s some pooular dishes are Rajma chawal, dum aloo, methi chaman. Chana madra from Jammu region is also popular. Kashmiri cuisine is enhanced with spices like cardamom, cinnamon, cloves, fennel seeds etc. and this makes the food delectable and aromatic.
Kashmiris are also fond of tea as well. Kashmiri Kahwa and noon chai/ sheer chai is popular across India.
Kashmiri Kahwa is traditional Kashmiri tea flavoured with cardamom and infused with cloves, cinnamon , saffron and rose petals. It is prepared in a brass kettle known as “Samovar”.
So in a nutshell, we can say that Kahwa is a green tea with spices and has many health benefits too.
So here is a recipe of refreshing, relaxing , soothing and rejuvenating Kahwa.
Preparation time: 5 minutes
Cooking time: 10 minutes
Serves: 2 persons
Ingredients:
3 cups water
1 green tea bag / 1 tsp kashmiri green tea
1/8 tsp saffron
2 small piece cinnamon
2 cloves
2 green cardamoms ( crushed )
1/2 tsp dried rose petals
1 tsp almond silvers
1 tsp honey or any sweetner ( optional )
Method:
1. Add saffron , cinnamon, cloves, cardamoms and rose petal in 3 cups of water. Turn on the flame and simmer it for 3-5 minutes after one boil.




2. Turn off the heat and green tea in water. Let it steep for 1-2 minutes.

3. Strain it and add almond silvers.
4. Add sweetner if needed.
5. Serve hot.
Note:
1. Can use fresh rose petals too.
