GHENS ( BROKEN RICE PORRIDGE)

Ghens is a traditional Gujarati dish which has now fallen in forgotten / lost recipes category. Our traditional dishes are healthy and prepared with minimum ingredients.
Ghens is one of such dishes , it is pepared from broken rice ( kanki ) and curd. Combination of rice and curd are very helpful when you are suffering from vitamin B12 deficiency. This easy recipe is my favourite. When new crop of rice is available, the new broken rice makes this dish more delicious.
It tastes yummy when cooked in earthen pots and on Chulha, but in morden times people want quick recipes as they are always running out of time. It can be prepared with or without temper. I prefer and like it without temper.

Preparation time: 15 minutes
Cooking time: 20 minutes
Serves : 1 person
Ingredients:
1/4 cup broken rice ( kanki )
1/2 cup curd
1 green chilli ( chopped )
1/2 tsp cumin seeds
Salt to taste
Method:
1. Soak broken rice for 10-15 minutes after washing.

2. After 15 minutes, add salt, cumin seeds, green chillies and water and pressure cook it for 3-4 whistles.

3. Once the steam is realeased , remove it from cooker, whip the curd and add into it. Add some water too, mix well.


4. Now cook it on slow flame for 5-7 minutes. Adjust the quantity of water as per your choice of consistency you like.
5. Serve hot.

Note:
1. You can add ginger, coriander and ghee too.
2. You can cook in earthen pot on slow flame and when rice is cooked, add curd and cook for while.
