KHICHDI

Khichdi ( hotchpotch ) is considered as sick people diet as it is light in digestion. Prepared from rice and split yellow beans (dal), this humble khichdi is now our national food.
Now a days there are so many flavours added in basic khichdi to make it more tasty. These flavours attracts those who dislike khichdi.
Basic khichdi is also made from skinned green split beans ( chilke wali mung dal ) and yellow split beans (pili mung dal). Here is a khichdi with green split beans.

Preparation time: 5 minutes
Cooking time: 20 minutes
Serves: 4 persons
Ingredients:
1 cup rice
1 cup green split beans
8-10 black pepper
Salt to taste
Ghee for serving
Method:
1. Mix rice and dal ,wash and soak for an hour.
2. Once there are soaked ,add water as per 1:3.5 ratio.
3. Add black peppers and salt.
4. Now pressure cook it for 3 whistles. After 3 whistles, turn the flame on slow and cook for 5 minutes and turn off the flame.
5. Once steam released , remove it from cooker, mix well.
6. Add ghee in generous quantity and serve hot.
Note:
1. Can add some fenugreek seeds along with black peppers.
