TOMATO SAAR

Tomato Saar is a Maharashtraian delicacy which is simple and mildly spiced tomato broth made regularly in Maharashtraian households. It is served with steamed rice and papad.

Tomatoes are the key ingredient of this recipe and we all know that tomatoes are rich source of vitamin C which is a natural antioxidant. Tomatoes are also good for healthy heart, good eyesight and clear skin.

INGREDIENTS
4 tomatoes
4 tbsp grated fresh coconut
2 green chillies
1 tsp cumin seeds
½ tsp mustard seeds
2 dry red chillies
Pinch of asafoetida
8-10 curry leaves
1 tbsp oil
Salt to taste
¼ tsp turmeric powder (optional)
½ tsp red chilli powder (optional)

METHOD

1. Blanch the tomatoes in 2 cups of water. Once they cool down, drain it through colander and grind it in a puree. Keep the drained tomato stock aside.

2. In a grinding jar, add grated coconut, green chillies and cumin seeds and grind it in a paste.

3. Mix prepared puree and the paste. Add the spared tomato stock in it and mix well.

4. Heat oil, prepare tempering of mustard seeds, dry red chillies, curry leaves and asafoetida and add prepared tomato mixture.

5. Add salt and spices if you wish. Let it boil. After one boil, turn the flame on simmer and simmer for 5-7 minutes.
6. Serve hot with steamed rice and papad.

NOTE:
1. Can add garlic and ginger while grinding coconut.
2. Can add jaggery or sugar also.
