HARIYALA MOONG

Moong/ Green bean is a protein rich bean and also easy in digestion in comparison to other beans and pulses. Moong is consumed in Jain community very often, but they make it in a simple way due to religious reason.
This recipe contains lots of greens and it makes it more healthy and more delicious. Flavours and taste of fresh green make this moong a satisfying and soulful.
We can consume it with rice or any flat bread or even a bowlfull of this moong can be consumed as mini meal, breakfast. Even weight watchers can include this in their diet.

Preparation time: 20 minutes
Cooking time : 15 minutes
Serves : 4 persons

Ingredients:
1 cup whole green bean
1/2 cup chopped spinach leaves
1/2 cup chopped fenugreek leaves
1/2 cup chopped green tomatoes
2 onions chopped
2-4 chopped spring onions
2-4 chopped green garlic
1 tbsp finely chopped garlic
1 tsp finely chopped ginger
2-3 chopped green chillies
1/2 cup finely chopped coriander
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp garam masala
1/4 tsp asafoetida
1 tbsp ghee
Salt to taste
1/2 cup water

Method:

1. Wash and pressure cook the green beans.

2. Heat ghee in a pan, add cumin seeds and asafoetida.

3. Then add garlic and saute for few seconds, further add ginger and saute for few seconds.

4. Add onions and saute till it becomes transparent and soft. Add green chillies when onions are cooked half way.

5. Add green tomatoes and cook for 2-3 minutes. Then add spinach and fenugreek leaves. Mix well, cover and cook for 2-3 minutes.

6. Add pressure cooked green beans, also add spring onions and green garlic and coriander.

7. Add all the spices and salt . Mix well add about half cup of water, cover and cook for 2-3 minutes.

 

 

 

 

8. Turn off the heat and serve hot with rice or any flat bread or relish it as you like.

Note:

1. Can add lemon if you like.
