DILL LEAVES RICE

Dill leaves ,a wispy and fern like greens have soft and sweet taste with strong smell. Origin of dill leaves ( sprigs ) are Mediterranean and Eastern European regions. Dill leaves are good source of vitamin C ,A and antioxidants.
Dill leaves help in preventing Insomnia, cures Diarrhea, reduces inflammation ,manage diabetes, promotes digestion, enhances immunity, maintain bone health and many more benefits.
We can prepare many dishes from dill leaves. Here is simple and delicious rice dish.

Preparation time: 15 minutes
Cooking time: 10 minutes
Serves: 4 persons

Ingredients:

1 cup rice ( basmati )
2 cup chopped dill leaves
1 tbsp chopped carrots
1 tbsp chopped potatoes
1 onion cut in thin slices
1 tbsp ginger garlic paste
1 finely chopped tomato ( I used green tomato)
2 green chillies chopped or slited
2-3 cloves
1-2 small piece cinnamon
4-5 black pepper
1-2 bay leaves
1 star anis
1 tbsp ghee
Salt to taste

Method:

1. Wash and soak rice for 20-30 minutes. Heat ghee ,add bay leaves, star anise , cinnamon, cloves and black pepper and saute for few seconds.

2. Add onions and start sauting it, add ginger garlic paste too.

3. After onions are sautéed and become transparent, add chopped tomatoes and green chillies. Saute it till tomatoes become mushy and soft.

4. Add carrots and potatoes and saute for a while. Then add soaked rice and mix carefully with a light hand.

5. Now it’s time to add dill leaves, mix well and add 2 cups of water (1:2 ratio ) and salt, mix well and pressure cook it for 2 whistles on a medium flame.

6. Our aromatic rice dish is ready to serve. Separate grains with fork and serve with curd or raita.

Note:
1. Can add your choice of vegetables.
