CHAAT MASALA

Apart from the regular spices, special spices play main role in preparing many dishes. In Indian cuisine, there are special spice mixes for majorly consumed dishes and there are several spices which are used in multiple dishes. Garam masala, kitchen king masala , chaat masala etc are such spice mixes. They play the role of Joker in our kitchen spices. Adding these masalas, enhances taste of any dish.
Now a days a very large range of such spices are available in the market. But some spice mixes,we can easily make at home as all ingredients for preparing them are available in our kitchen.

Preparation time: 15 minutes

Makes: 3 cups

Ingredients:

1/2 cup coriander seeds
1/2 cumin seeds
1/4 cup black pepper
12-15 dry red chillies
1/2 cup dry mango powder ( aamchur )
1/4 cup black salt
1/2 cup salt

Method:

1. Remove stems and seeds of dry red chillies. Dry roast cumin seeds, coriander seeds, black pepper and red chillies on a slow flame.
Roast it till you feel the aroma and keep stirring to avoid burning.

2. Once they are roasted properly, let them cool completely. Then mix rest of the ingredients.

3. Then grind it in fine powder.

4. Pass through a sieve, and if there are any ungrinded spices, grind it again and sieve.

5. Store it in an air tight container. Use it when required.

Note:
1. Can adjust quantity of salt, black salt and dry mango powder as per your taste.
