CORN COCONUT CURRY

Curry/vegetable/sabzi is a major dish of main course in any cuisine. Some preparations of vegetable like curry ,sabzi etc are consumed with any flat bread.
Here is simple and yummy combination of corn and coconut ,which is turned out in a delicious curry.

Preparation time: 20 minutes
Cooking time: 15 minutes
Serves: 2 persons

Ingredients:
2 cup boiled corn kernels
1 coconut
1/4 cup powdered peanuts
1 tsp chilli ginger paste
1 tsp sugar ( optional )
1 tbsp oil
Salt to taste

Method:

1. Grind coconut,spare 2 tbsp grinded coconut and add 2 cups of water into the rest of the coconut. Grind one more time, strain it and keep aside that coconut milk.
2. Heat oil , add chilli ginger paste and saute for few seconds. Then add coconut milk.

3. Once it starts boiling add, boiled corn and let it cook for 3-5 minutes on slow flame.

4. Now add spared crushed coconut, powdered peanuts and salt, sugar. Mix well and cook for 3-4 minutes on slow flame. Then turn off the heat.

5. Serve hot.

Note:
1. Can use readymade coconut milk also.
