OSAMAN ( MUNG BEAN SOUP )

Protein rich Mung (Green beans ) are easily beans in comparison to other. Also it cooks faster and no need to soak.
Mung is often used in Jain community. Mung can be made in different ways like dry mung, rasa wala ( liquidy gravy ) mung, khatta ( using buttermilk ) mung. One more is osaman, which is basically a Gujarati dish and paired with dry mung and rice. We can say it , Mung bean soup as it is a good appetizer like soup.
Osaman can also be prepared in different ways, thick-thin, with or without buttermilk etc. Choice is ours and depends on our taste.
Here I have shared very simple recipe of osaman. Which can be consumed as soup also. It is the best option , when you want to give rest to your stomach.

Preparation time : 2 minutes
Cooking time : 10 minutes
Serves : 2 persons

Ingredients:

1/2 cup boiled mung
1/4 tsp turmeric powder
1/4 tsp cumin seeds
Pinch of asafoetida
1 tsp ghee
1 tsp lemon juice
7-8 curry leaves
Salt to taste
Coriander for garnish

Method:

1. Add two cups of water in boiled mung and grind it.

2. Heat ghee , add cumin seeds and let it splutter.

3. Once it splutters , add asafoetida, turmeric powder and curry leaves and add grinded mung.

4. Now add salt and let it boil for few minutes. Lastly add lemon juice and turn off the heat. Garnish with coriander and serve hot.

Note:

1. You can strain mung water after grinding it.
2. Can add more or less water as per your choice.
