BROCCOLI ALMOND SOUP

Broccoli is now easily available in India . It has vitamin C in good quantity as well as vitamin A and B6. Along with dietary fiber, it contains Magnesium too. Quick view of it’s health benefits are that it removes toxins and free radicals from body, also helps to maintain healthy heart and skin. Apart from strengthening immune system, it protects eyes too. Also helps bin treating cancer. Do I need to say anything about almonds & it’s health and nutrition benefits? We all know very well about this dry friut which contains calcium, iron, magnesium, protein, dietary fiber and potassium.

Preparation time: 15 minutes
Cooking time: 15 minutes
Serves : 4 persons
Ingredients:
2 cup broccoli stalks and florets
1 roughly chopped onions
4 roughly chopped garlic cloves
1/2 tsp corn flour
1 cup milk
1 tsp black pepper powder
1/2 cup almond silvers
Method:
1. To prepare almond silvers, soak almonds in hot water for 5-6 hours, then remove its skin and slice it finely.
2. Heat 2-3 cups of water, add broccoli stalks and florets ( spare few florets ), onion, garlic ,salt and cook it for 5-7 minutes.

3. Turn off the heat and allow it to cool little.
4. Once it becomes luke warm , add 1/4 cup almond silvers in it and blend it till smooth.


5. Now dilute corn flour in milk, add it into the blended puree along with black pepper powder.

6. Cook it for 5-7 minutes, lastly add spared florets and almond silvers, cook for 2-3 minutes. Turn off the flame.
7. Garnish with almond silvers. Serve hot.

Note:
1. Can add fresh celery and basil too.
