MUTHIYA CHAAT

Muthiya are a famous Gujarati snack. They are steamed dumplings , which can be eaten steamed with oil and chutney or later it can be tempered and sauted. It can be made from coarse flour and veggies or leafy vegetables etc. You can make it as per your choice and taste.
The famous version of muthiya is from bottle gourd. I have made of fenugreek leaves. Then I made its Chaat version.
Preparation Time: 15 minutes
Cooking time: 30 minutes
Serves : 4 persons
Ingredients:
For muthiya :
1 cup coarse wheat flour
1/2 cup maize flour
1/4 cup jowar flour ( sorghum flour )
1/4 cup gram flour
1/4 cup handva dhokla flour ( optional )
4 tbsp oil
1 cup finely chopped fenugreek leaves
2 tbsp chilli paste
1 tsp sugar ( optional )
1/2 tsp turmeric powder
1/2 tsp cooking soda
1 lemon
Salt to taste
For Chaat:
2 cup whipped curd
1 cup dates tamarind chutney
1/2 cup mint coriander chutney
1/4 cup diluted garlic chutney
1 finely chopped onion
1/2 cup finely chopped coriander
1 cup besan sev ( thin )
Chaat masala for sprinkle
Method:
1. Mix all flours,oil ,salt ,sugar and turmeric powder and crumble it. Spread baking soda on fenugreek leaves and pour juice of lemon over it. It starts bubbling , mix it well with leaves. Now add leaves, chilli paste in flour , mix well and knead soft dough. Add water little by little.

2. Now with wet or greased palms, prepare dumplings from that dough and steam cook it like dhokla on slow medium flame.


3. Once it is steamed, let it cool completely. Then cut it into the slices.

Making chaat:
1. Arrange slices of muthiya in plate.
2. Pour curd and all three chutney.
3. Then add some onions, add chopped coriander too. Sprinkle chaat masala.
4. Relish it.
Note:
1. Can add pomegranate seeds too.
