GAZPACHO

Gazpacho is Spanish cold soup with key ingredients cucumber ,tomatoes & bell peppers. This is healthy soup which is best in summers. I have made few changes in the traditional recipe. Many people add bread in Gazpacho, I didn’t.

Ingredients:
2-3 tomatoes
1 cucumber
1 small capsicum
1 lemon
1/4 cup olive oil
1 clove garlic
Salt & pepper to taste.

Method:
1. Peel & roughly chop cucumber. If seeds are not tender, remove them. Roughly chop tomato & capsicum too.

2. Now in a blender, add chopped vegetable , garlic , lemon juice & chilled water with few ice cubes & blend it well.

3. Now add olive oil & salt & pepper & blend it again.

4. Then strain it , adjust seasoning & chill it more ,then serve chilled.

Note:
1. Red wine vinegar can be used instead of lemon juice.
