AKKI ROTI ( RICE FLAT BREAD)

Akki roti is Karnataka special , prepared with rice flour,vegetables & tapped on tawa. Here, I tapped on a plastic sheet & then transferd to tawa. Akki means rice in Kannada. Akki roti is served as a breakfast & lunch with coconut chutney. Though it is popular breakfast item & found as a street food too. These rotis are high in fibre & carbs & that’s why filling too. You can add any vegetables of your choice in any form.

Ingredients:
1 cup rice flour
1 finely chopped onion
1 grated carrot
1 tbsp finely chopped coriander
1 tbsp chilli-ginger paste
1 tsp cumin seeds
Salt to taste
Oil for roasting

Method:
1. In a large bowl, mix all the ingredients & mix well with hand.

2. Add water & knead soft dough.

3. Now spread plastic sheet, wet it with little water, take small ball from prepared dough & start tapping with hand. If you are not comfortable with tapping, roll it light hand between two plastic sheets.

4. Make holes in centre so oil can spread easily. Now carefully put this roti on preheated & greased skillet.

5. Pour some oil in holes & outer edges too.
6. Cook from both sides.

7. Serve hot.

Note:
1. Prepared dough medium hard , if you wish to roll.
2. Can add left over rice in dough.
