( INDIAN FLAT BREAD WITH FENUGREEK LEAVES)

Indian meal, in any states & regions, contain flat bread, vegetable preparation, dal/pulse preparation & rice preparation mainly along with condiments & side dishes. Every preparation has different ingredients & different method. Dhebra is Gujarati special sauted flat bread,made from Pearl Millet flour ( bajri flour )& fenugreek leaves aa key ingredients. This is winter special item which can be eaten in breakfast , lunch or dinner with curd, tea , vegetable preparation or pickles.

Ingredients:

2 cups pearl millet flour
1 cup wheat flour
1-1/2 cup curd ( preferably sour)
2 cup finely chopped fresh fenugreek leaves
4 tbsp oil
1 tbsp sesame seeds
1 tsp turmeric powder
2 tbsp ginger chilli paste
2 tbsp garlic paste (optional)
1 tbsp sugar
Salt to taste
Oil for cooking

Method:

1. lightly whip curd & add all ingredients in it except oil & flours. Mix well.
2. Now mix both flour with oil & knead dough with prepared curd mixture. Prepare dough medium hard.
3. Now take lemon size dough & roll it, use dry wheat flour to avoid sticking. Do not roll very thin, keep it little thick like paratha.
4. Now on a preheated skillet, cook it from both side using oil.
5. Serve hot. It tastes yummy spreading thick ghee over cold dhebras.

Note:
1. Fresh green garlic can be added instead of garlic.
2. Do not knead dough in advance else it will become soft & can’t roll properly.
