VERMICELLI RICE ( LEBANESE RICE)

This Lebanese rice is very easy to make with very few ingredients. There are various rice preparations in Mediterranean cuisine, but this is the Every-day rice of Middle East. To make this dish Vegan use oil instead of ghee.

Ingredients:
1 cup long grain rice ( I used Basmati )
1/2 cup vermicelli
2 tbsp ghee
Salt to taste.
Few strands of saffron for garnish

Method:
1. Wash & soak rice for 10 minutes,then drain water & keep aside.
2. Keep ready about 2 cups of boiling water.
3. Heat ghee in broad non stick pan, add vermicelli & saute till it becomes golden brown.

4. Add rice & saute 3-4 minutes.

5.Now add ready hot water in it, add salt & bring it to boil.

6. Once it starts boiling , slow down the flame,cover the pan & let it cook till the rice is cooked.
7. Garnish with saffron strands.
8. Serve hot with any spicy curry or mix vegetable.

Note:
1. Can add some nuts.
2. Can add some fresh herbs after rice is done.
