VEGETABLE TORTILLA SOUP

This soup is delicious combination of crunchiness & juicy flavours . This tomato base soup contains vegetables as well as corn kernels. Crispy tortilla & cheese make this soup more appealing. So crunchy vegetables & crispy nacho chips make wholesome & bowlful treat.

Ingredients:
10 big tomatoes
1 tbsp finely chopped carrots
1 tbsp finely chopped french beans
1/4 cup boiled corn kernels
1 tbsp finely chopped garlic
2 finely chopped onions
2 tbsp butter
1 tbsp corn flour( diluted in one cup water)
1 tsp red chilli powder
1/2 tsp sugar
4 tbsp grated cheese
2 cups crushed nacho chips
Salt to taste.
Method:
1. Wash & chop tomatoes. Pressure cook for 3 whistles.
2. Once it cools down, blend & strain it. Keep aside.
3. Now in a pan, heat butter, sauté onion & garlic for 1-2 minutes than add carrot & french beans , sauté for 2-3 minutes.

4. Now add tomato puree ,diluted cornflour, 2 cup water (approximately),salt, sugar & red chilli powder. Mix well & bring it to boil.
5. Once it starts boiling, add corn kernels & slow down the heat & cook for 5-7 minutes.
6. Just before serving, add crushed nacho chips, garnish with cheese & serve hot.

Note:
1. Can replace red chilli powder with black pepper.
2. You can skip adding cornflour.
