PUMPKIN SOUP

We all have seen carved pumpkin at the time of Halloween, but health benefits of pumpkin , makes it fall in Super food category. Let us go through about its benefit. This highly nutritious fruit is rich in Vitamin A while high antioxidant content helps to reduce risk of Chronic Diseases. It contains vitamin C, E, Iron & folate along with Vitamin A which helps in Immunity boost, good for eye sight, low calorie count may help in weight loss.
This highly nutrient fruit & it’s antioxidants help in healthy skin & fight against cancer. We can easily include it in our diet in the form of soup, curry, smoothie, dessert etc.

Ingredients:
1 cup peeled & chopped pumpkin
1 small carrot
1 small tomato
1 small onion
4 garlic cloves
1 tsp black pepper powder
Salt to taste
1 tbsp cream (optional)
Method:
1. Pressure cook all vegetables along with 2 cup water for 4 whistles.
2. Once pressure release, let it cool & blend it.
3. Then pass through strainer if needed, add water as needed. Add salt & pepper
powder & boil for 5-7 minutes.
4. Lastly, if you wish , add cream & serve hot.

Note:
1. Can add or skip vegetables of your choice, but quantity of pumpkin should be more then rest of vegetables.
