PALAK KADHI ( SPINACH CURRY)

Spinach is a very rich source of iron & we all know this fact. We should include it in our meals more & more, in any form. Kadhi is also known name in every home. Various types of Kadhi are made in different ways in different regions, states & even home also.
Palak kadhi is best option for cool winter evenings. This hot & spicy kadhi goes perfect with steamed rice,khichdi or rotla.

Ingredients:
1 cup curd (preferably sour)
1 cup spinach puree ( blanched & grind)
1 cup finely chopped spinach
1 tbsp gram flour
2 green chillies
Salt to taste.

For tempering:
1 tsp cumin seeds
1 tsp red chilli powder
1 pinch asafoetida
1 tbsp ghee/oil

Method:
1. Heat curd for few minutes.
2. Now mix curd,spinach puree, green chillies &gram flour. Blend it well.
3. Now in a thick bottom pan, pour this blended mixture and two cups of water in it, mix well & bring it to boil.
4. Once it starts, boiling, add chopped spinach in it. Boil for few more minutes. Stir occasionally.
5. Lastly temper it with tempering ingredients.
6. Serve hot.

Note:
1. If you wish to add onion-garlic, then saute it first & then add kadhi mixture & let it boil.
