ALOO POSTO

Aloo Posto is popular dish in West Bengal. Posto means Poppy seeds ( Khuskhus). In the kitchen of Bengalis, Poppy seeds, Kalonji (onion seeds/nigella seeds), mustard oil are the “Must” ingredients. They often & frequent uses these ingredients.
Aloo Posto is an authentic Bengali dish, where potatoes are cooked with poppy seeds. Potatoes are staple & easily available in any part of world. This easy recipe can be turned into delicious side dish of your meal.
Ingredients:
4 potatoes
2 tbsp poppy seeds ( khuskhus)
1/4 tsp turmeric powder
1 green chilly
1 tsp kalonji ( onion seeds/nigella seeds)
1 tsp sugar
2 tbsp mustard oil
Salt to taste
Method:
1. Wash & soak poppy seeds in water over night.
2. Next day, strain the water from poppy seeds & make thick paste of poppy seeds & one green chilly by adding little water.
3. Wash & peel potatoes & cut it into dices.
4. Heat oil in pan, once smoked, turn off flame.
5. Once it cool down, heat oil, add kalonji, turmeric powder & potatoes. Mix well & cover lid & let it cook on simmer, stir occasionally.
6. Once potatoes are near to cook, add salt, sugar, prepared paste, chopped green chillies, mix well.
7. Cover again & cook for 5-7 minutes more.
8. Serve hot with meals.
Note:
1. If require instantly than soak poppy seeds in hot water for 1-2 hours.
